Barbados, a tiny island of 431 square kilometres, made up of white sandy beaches, clear water, sunny skies and a moderate tropical climate. Barbados is the only Caribbean island that is situated on a coral reef, all other islands are volcanic. This tiny piece of paradise is definitely the perfect place to escape to during our freezing cold winters.
Did you also know that Barbados is the birthplace of rum? More specifically, Mount Gay Rum opened the first distillery in the world there. Mount Gay has been making rum since the mid 1600's and was branded in 1703. It was then and still is to this day, the rum of sailors.
Mount Gay Eclipse Silver Rum is a aged white rum, which is not that common. Normally white rums are distilled and bottled immediately after, but Eclipse Silver is aged for two years in oak barrels. When the aging process is done, this rum comes out with a straw colour to it. It is then charcoal filtered to give it the crystal clear appearance.
Eclipse Silver has a gentle aroma, with hints of cane syrup and banana. Flavourful and clean to the palate, you can definitely taste the vanilla and peppermint, with a slight underlying hint of citrus and banana on the finish. This rum is great for sipping chilled or on the rocks, and is fantastic for mixing in your favourite rum cocktails.
